Healthier Mini Chocolate Chip Muffins

Ingredients
Dry Ingredients
- 2 ¼ cups pastry (or all-purpose) flour
- ½ teaspoon salt
- ½ tablespoon baking powder
- 1 cup mini semi-sweet chocolate chips
Wet Ingredients
- 1 egg
- 1 ¼ cup milk
- 2 tablespoons vanilla extract
- ⅓ cup avocado (or any vegetable) oil
- ⅓ cup maple syrup
Preparation
- Preheat oven to 400 degrees Farenheit.
- Place liners in mini muffin baking pan and grease bottoms. Alternatively, just grease pan slots.
- Combine wet ingredients using paddle mixer and gradually ascending from slow to fast speed.
- Add in dry ingredients, being careful to add the chocolate chips last and beating them in at slow speed.
- Scoop batter into baking pan. There should be enough batter for roughly 48 mini muffins.
- Bake for 17 minutes (until toothpick comes out clean).
