Healthier Mini Chocolate Chip Muffins

Ingredients

Dry Ingredients

  • 2 ¼ cups pastry (or all-purpose) flour
  • ½ teaspoon salt
  • ½ tablespoon baking powder
  • 1 cup mini semi-sweet chocolate chips

Wet Ingredients

  • 1 egg
  • 1 ¼ cup milk
  • 2 tablespoons vanilla extract
  • ⅓ cup avocado (or any vegetable) oil
  • ⅓ cup maple syrup

Preparation

  1. Preheat oven to 400 degrees Farenheit.
  2. Place liners in mini muffin baking pan and grease bottoms. Alternatively, just grease pan slots.
  3. Combine wet ingredients using paddle mixer and gradually ascending from slow to fast speed.
  4. Add in dry ingredients, being careful to add the chocolate chips last and beating them in at slow speed.
  5. Scoop batter into baking pan. There should be enough batter for roughly 48 mini muffins.
  6. Bake for 17 minutes (until toothpick comes out clean).
