Vegan Chocolate Chip Cookies

Ingredients

Dry Ingredients

  • 70 grams all-purpose flour (about ½ cup flour)
  • 1 teaspoon baking powder
  • 1 tablespoon corn starch
  • Dash of salt
  • 4 tablespoons brown sugar
  • As many semi-sweet chocolate chips as you want

Wet Ingredients

  • 4 tablespoons olive oil
  • ¼ teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (I used vanilla for extra flavor)

Preparation

  1. Place mixing bowl on food scale and ensure 70 grams of all-purpose flour are used.
  2. Combine flour, baking powder, corn starch, and salt.
  3. Mix in olive oil and brown sugar (I used dark brown sugar).
  4. Add vanilla extract and almond milk.
  5. Fold in chocolate chips. You should have a doughy, oily mix.
  6. Preheat oven to 400 degrees Farenheit. Chill cookie dough in fridge for over 10 minutes while oven preheats.
  7. Bake for 15 minutes until golden brown.
