Vegan Chocolate Chip Cookies

Ingredients
Dry Ingredients
- 70 grams all-purpose flour (about ½ cup flour)
- 1 teaspoon baking powder
- 1 tablespoon corn starch
- Dash of salt
- 4 tablespoons brown sugar
- As many semi-sweet chocolate chips as you want
Wet Ingredients
- 4 tablespoons olive oil
- ¼ teaspoon vanilla extract
- 2 tablespoons unsweetened almond milk (I used vanilla for extra flavor)
Preparation
- Place mixing bowl on food scale and ensure 70 grams of all-purpose flour are used.
- Combine flour, baking powder, corn starch, and salt.
- Mix in olive oil and brown sugar (I used dark brown sugar).
- Add vanilla extract and almond milk.
- Fold in chocolate chips. You should have a doughy, oily mix.
- Preheat oven to 400 degrees Farenheit. Chill cookie dough in fridge for over 10 minutes while oven preheats.
- Bake for 15 minutes until golden brown.
